Quiet camping lakes in SW US

I'm planning a spring getaway from Jackson Hole, probably about mid to late April. I would love to take my SUP, camp on some quiet lake shore and paddle about 4-5 days away. Ideally, it would be somewhere about a day's drive away or so, like maybe Arizona, New Mexico - somewhere that I might not have to wear a wetsuit to be comfy. Anyone have any great ideas? Not really interested in the major resort destinations or any college spring break crowds!
